Josh will discuss switching to a vegan diet free of meat, fish, poultry, dairy and processed food that helped him maintain blood tests consistently at almost perfect levels, and a loss of 30 lbs and 4 inches off his waist. Josh will mention how he straddled both the world of modern medicine and nutritional excellence, and earned a Certificate in Plant-Based Nutrition from eCornell. During the year of 2015, Josh had a stroke followed two months later by a heart attack. His family had a history of both. He could not walk without a walker and a companion, could not speak or write. He has reclaimed most of those capacities and for most people the deficits that remain are not detectible. For Josh, the plant food diet has greatly improved his life.
